Yes, I know and funnily Joran was able to look at people she wasn't looking at as if she had eyes behind her head for the duration of the "separation". Or knew that a rifle wasn't loaded even of she didn't know it. It's rather confusing given that all that is happening in her head. It's a kind of schizophrenia...
As someone who has had weapons training, I know that you DO NOT point a firearm, loaded or unloaded, at a person you don't intend to kill. Possibly Ezri, as a Starfleet officer, had had similar training. So, even if she knew that the gun was unloaded, it would have been anathema to point it at someone.
The "eyes in back of head" thing was probably just sloppiness, but I'd need to watch the episode again to be sure. Some people have extremely high situational awareness. Being violent by nature, Joran might exhibit this, allowing Ezri to have it while he's "active".
