I don't think Trek has ever been scientifically possible. I've lived to learn with that. What I still can't live with is when one of the shows puts someone in command that shouldn't be remotely near the captain's chair. Crusher, Chekov (in ST2009), Kirk (cadet promoted to first officer), Tilly.

Wasn't the main fleet in some other star system dealing with something never explained, which is why Enterprise and the other vessels were crewed by cadets?

Them getting to keep their positions afterwards is a bit much, but hey it's a movie. YMMV.

The bulk of the fleet was in the Larantian system dealing with a crisis. The task force of ships had both cadets and officers and lost about 90 percent of their staffing. Which means a shortage of personnel and that then keeping their positions makes a bit of sense.
