So what I'm wondering now is whether killing off all the Cardassians had been the plan the entire time since the Battle of the Omarion Nebula, or had the Founder changed her mind by season 5, only to change it back in What you leave behind?
 
They would use the Cardassians for as long as they were useful. Subjugation is much more useful than eradication. But their days were always numbered, IMO.

Yes, that is my interpretation as well. And probably the Romulans will be eliminated as well, as soon as that can be arranged.
 
The name of the game, dom-jot, as it is pronounced on DS9 sounds like "dumb jock".

What was the behind-the-scenes reason for the name and pronunciation?

Trek fans are stereotyped as nerdy. Jocks bullying nerds is a trope in pop culture. I couldn't help but wonder if the person who came up with the name had this in mind. Could the dumb jock pronunciation be a witty attempt by the writer to lampoon the trope of the jerk jock, a revenge of the nerds type of thing? I know it sounds farfetched.
 
I believe it's first seen on TNG, not DS9, but in any case, Memory Alpha doesn't have anything to say regarding the name. I think your theory is a bit far-fetched, but I can't conclusively rule it out.
