You know that it occurs to me that, with a little extra work you could expand this to the 2009 Enterprise and the following variations.

While I am not too keen on the design of the external view, of said ship, what am interested in is the interior. For example the saucer rim, is supposed to be five decks high...with a crew of 2,000...
 
On the cutaways and cross-sections I make for my blueprints, doors are visible. I have given thought to their colours, but I mostly just tried to match what we see in the episodes.

1. Has anyone tried to plot the door colours onto a DESILU plan?
2. Are the doors the same colour on both sides?
3. Have the doors on the DESILU stage ever changed colours?
 
That was shown on-screen to my recollection, and not until season 3, I think? Maybe season 2. Can't remember clearly.

The sets were all pretty much gray and lit with colored gels. Brilliant piece of set dressing technique, as the budget and available space was limited, so if you needed to depict a different room, just change the lighting color and intensity. This was particularly true for the crew quarters, briefing room and engineering sets, all of which were used for different places on the ship.
 
Yes, @Jim Botaitis and I are working on that. Would love to have some input though from others.

Just a couple of thoughts:
  • Bathroom (if you mean that third door in Kirk's cabin) is grey (see the phaser overload scene in COTK)
  • Science (such as McCoy's lab) is yellow - a good example is in Return To Tomorrow with Spock lounging on the door.
  • Medical (Sickbay) is indeed turquoise, seen many times! Also the door McCoy exits out of at the start of Amok Time is the same colour, suggesting another medical facility. Curiously, the one-bed wardroom in Turnabout Intruder is yellow! McCoy's office has a grey door.
  • Crew quarters (such as Kirk's cabin) had grey doors, but Kodos' cabin (situated on the inner part of the curved corridor) had a yellow door.
  • Transporter Room doors were always blue.

1. The main sets (Transporter Room, Sickbay complex, Briefing Room, Cabin) tended to keep their door colours, but the others would change as the needs of the plot demanded. For example, the wild room next to Kirk's cabin would either be red or yellow depending on the room behind it that week.
2. Yes - only an error in DS9's episode showed anything else.
3. Yes - I gave one example in point 1 but another would be the doors opposite the Transporter Room which became a red-doored turbolift for one episode (LTBYLB and the doors at the end of the straight corridor which would also flips from blue doors to red turbolift doors depending on the episode (except in The Naked Time when they were a blue set of turbolift doors!) The red doors at the end of the curved corridor became turquoise in Amok Time (already mentioned above). And of course the entrance to Engineering changed from a yellow single-pocket door in Season One to a set of red double-pocket doors in Season Two & Three.
 
Since fidelity to what was seen in TOS (which varied) is not the primary driver here (not that you're abandoning accuracy in the ways that matter!), has there been any consideration of using the MSGTTE scheme or something along those lines (as Donny V did)?
D Deck: Brown
E Deck: Red (Orange?)
F Deck: Silver
G Deck: White
H Deck: Light Blue
I Deck: Yellow
All secondary hull corridors: Silver (with blue lighting)
I'm not suggesting it as a preferable option, just wondering your thoughts on the matter of deck based coloring vs department etc.

Fidelity to what was seen in TOS *is* the primary driver for @Jim Botaitis' blueprints. He states as much on the blueprints themselves. However, I see your point as it relates to the color schemes, which are my development, and you're right in that aspect. As I was modelling the full ship interior, it kept occurring to me that there is so much red everywhere. I took cues from the different colors of the floor (green in crew quarters, blue in sickbay, etc.) to bring some different colors to the areas that we did not see in TOS. I reasoned that corridors would keep their red trim throughout since red tends to instill a sense of urgency and we don't want the crew to be loitering too much in the hallways as it were. I themed the lounge and mess areas blue to instill a sense of relaxation. The nice thing is that the tools I'm creating allow me to change colors of just about any aspects of the corridor walls. I plan on releasing these to the public for free of charge. I hope to eventually see them in use by others who will bring their own creativity to bear. More detail on that here:
