If you can't get Pine back - Game Over.
Agree - IMO you can't do TOS version of Trek wo Kirk.

I voted fast-tack on Tarantino.
shooting now for release early next yearThat's not doable. QT is shooting Once upon a time in Hollywood next year.
Hopefully this time the actor they get isn’t a creep.
Both are possible but the named art was intended for ST09 not STiD. I'll agree to disagree since the red ship in STiD was never named but the same could be said that the red Excelsior was never seen on-screen in ST09. In the end in terms of reference Beta and EAS disagree. The art was for 09 but a ship of equivalency was seen in STiD. Regardless I'd never want to see an Armstrong-Type take up the silver-screen (fugly kitbash of the Kelvin like the bulk of the extras). No, not thinking of the Newton Class.
Although EAS, the red-hulled Armstrong-Class variant excelsior concept art can be seen here - in addition to the photo itself of the Excelsior (bottom left hand corner of the image of the 1701 at spacedock):

Also - the destruction of Vulcan occurred in ST09, whereas the red-hulled excelsior is seen in STID - so if it was present with the fleet at Vulcan, it certainly got away fast and survived intact to be docked at the space dock in the sequel movie...

Bringing back Hemsworth meant another time travel or space warping movie. They've done that already and it wasn't very good, mediocre at best (2009).
