There's multiple ways to watch. I'm personally going through it in the way it was released: starting with TOS. I am really enjoying it that way, too, so I think it's not to be dismissed. Also, I'd note that I really like the re-mastered TOS. I didn't watch TOS the first time around, though. So, I'm not sure how the old fans will feel about the new re-masters.

I agree, the TOS-R is the way to watch it, as with TNG-R.
For the most part, all of ENT and TOS you watch in order in the way it was released. Same for TNG season 1-5. But after 6, you have DS9 and VOY airing at the same time. I will post the introduction below, but would suggest you at least read the Process section.
This project was born with one simple thought: Wouldn’t it be cool to watch the entire live-action Star Trek canon in chronological order as the events occur within the Star Trek Universe?
After doing some research online, we discovered that no such list exists. Well, not one we were satisfied with anyway. Some lists we found just listed “Enterprise” at the beginning and then basically listed all the episodes in the order that they aired on TV. Another listed all TNG followed by all DS9, etc. Still another listed only by stardate (with some missing episodes).
Some of these were pretty good, but we still had questions. We wanted to know how all the 24th century (TNG, DS9, VOY) stuff fit together. Where do the TNG movies fit in? What if no stardate is listed? What about multi-part episodes and arcs? (You can’t just split one complete story in half because another episode aired in between.)
We felt there could be a more comprehensive list based on all the available information. We wanted a list that would flow naturally, and provide both coherency and variety. To that end, we set out to create a chronological order that was absolutely comprehensive and, well… logical. A list that when viewed in sequence would let the complete story of the Trek Universe unfold naturally.
To do so, we devised a series of rules to follow. As with any set of rules, there had to be a few exceptions made. We did our best to account for as much as possible, including stardate, time travel, in-universe consistency, airdate, and in some cases even production number.
Yea, I'm definitely not saying "don't watch it that way", just saying that isn't the one and only recommended way. I will probably watch it in that chronological order at some point in my life. Later on when enough time has passed. I watched Star Wars in chronological order, and I got something out of that.

I was going to make 2016 the year of Trek (for obvious reasons) and re-watch everything, doing a few hours a night. So far I've been, doing things really random and aimless. I started with the films (got through GEN) and The Cage. Then watched the first few episodes of TNG, and then the pilots of the other shows. I binged Voyager last weekend (for whatever reason), and got through most of the first season. The last couple of nights I've been TOSing it--watching "Little Girls" ATM. I was starting to think I'd just continue with TOS and then just go airdates, but that's kind of vanilla. This looks way more interesting.
Besides, I haven't seen most of the ENT episodes since they first aired, and I kind of want to watch them.

Yeah. While chronological order does have its merits, I don't know if I'd recommend it for first-time viewers. It's like telling someone to start with the prequels. They'd miss out on so much.

"Cruel" doesn't begin to describe it. I clearly remember being on the edge of my seat when Riker said "Fire!" and then I realized that this was the end of the season.
And then the phone rang. It was my boyfriend, and he'd just finished watching it, too. "I can't wait until next week to find out what happens!" he exclaimed.
"You're going to have to wait a little longer than that," I told him. "That was the last episode of the season. The next one doesn't start until October" (this was in the spring).
"October??!!" he wailed. "That's not FAIR!!!"

^^It's been pretty common on TV in more recent times, though it was fairly unusual then.
You're doing it the right way, don't let anyone tell you otherwise.
The only comparable things I can think of were a couple of season-enders on Dallas, with the "Who shot J.R.?" episode (I should have put money down on that, since I figured out right away who the guilty person was), and another was when Pam woke up and found Bobby Ewing in her shower (for non-Dallas fans, this had people speculating all summer about how he got there, since he'd been killed the season before).
Ah, yes..."Who shot J.R.?" was huge...I was in elementary school and everyone was talking about it there.
Interesting thing about that one, IIRC, is that the cliffhanger was well-publicized...everyone was watching because everyone knew he was going to get shot.

What they didn't know, however, was who the shooter was. Even the cast didn't know, because they shot scenes with every one of them holding the gun - including Miss Ellie and J.R. himself (those scenes were shown on a different program that discussed the storyline, and it was hilarious to see Larry Hagman as J.R., looking at himself with hatred, pulling the trigger... and then shaking his head in bafflement as though thinking, "Well, this is weird...").
The whole purpose was to get people to come back in the fall to find out how the storyline would be resolved, and it certainly worked with both Dallas and TNG. In TNG's case, there was a lot of speculation as to whether Patrick Stewart wanted out of his contract, and if so, TPTB could write him out of the show by making him Borg and having Riker give the order to kill him. I'm glad that's not what happened, but if it had, it would have been one hell of a story, not to mention an amazing shakeup of the show itself.
But in TNG's case, people didn't necessarily go into the episode knowing what was going to happen to Picard at the end...nor even that it was going to be a cliffhanger.
