It's possible they used "Emperor" to keep us in the dark as to who it was.

The writer of the episode where we hear her introduced by her full name and titles, said he and the other writers were instructed to use masculine titles to represent that the MU is gender neutral. She will have to be careful, very few people know that she is in fact the mirror version so she will have to dial it back a bit from what she is used to, even Pike may not know its hard to tell from the trailers.
The biggest danger to her will be when she bumps into others who knew prime Georgiou, Section 31 will be able to help her with that, making sure she knows who she has to be most careful around.

She wasn't able to playact for 5 minutes as Captain. They wrote her in S1 as more of toddler-in-chief than as a truly conniving leader. If they write her for S2 at all the same way they wrote her for S1, Pike and the rest of the galaxy will have no trouble figuring out what's up in no time at all or else the audience will be laughing.
