Did they ever mention what species tried to take out the Q?

New species created for the novels and had already enacted a plan to infiltrate Starfleet with an eventual goal of dismantling the Federation. Meaning they were also a far more present threat than the Q.

I am extremely shocked that DIS season 3 never dropped the term omega molecules when they established Species 10-C as engineering the DMA to harvest boronite.

That sounds silly. Why suddenly drop something they'd set up in the story?

I think you may have misread Enterprise's post. I believe what they're saying is that they're shocked that DIS S3 never name-dropped (i.e. mentioned) the omega molecule.
