Deck Plan Generations...and Bowling Alleys

As regards the ceiling height, you can see a portion of it when Kirk first sneaks through the backstage area:

After building out that complex, I can only say that we see the ceiling for the gym/theater part. But the adjacent room where the two guys are sparring we never see the ceiling. The back columns of that room extend above and past the initial curve of the theater ceiling which means that room's ceiling is quite different and potentially much higher where an unseen 3rd floor might even be possible...

I'd suggest for the stock to have frame that the power packs slot into. Otherwise, these would be "special" power packs that have some kind of connector at the bottom (to allow the two to connect) which I don't recall seeing on the props.

Actually, there is a socket on the bottom of the power pack that matches the socket on the body of the phaser (somewhat duplicated in the AA/DST phaser), so it's pretty clear that this is the direction the phaser rifle was going to take (at the very least, it demonstrates the modular nature of the design). I've thought about a stock that the power packs slip into, but then it just gets too bulky for my tastes.

As for the foregrip, it just needed something up front. My notion is that the little knob up front is a locking mechanism, allowing the user to switch out emitters, depending on the situation.

Perhaps a slightly beefier emitter then. Nothing too big, just a bit more substantial than the one on the pistol.

I'm referring to the actual barrel, the part that used to be on the front of the pistol.

It just looks a little small compared to the heftier look of the rest of the rifle.

I don't think it looks like it matches the connection at the phaser 2 - but you could always say it was introduced s4-5 :)
