I very much wanted to see Christopher Eccleston play one.
From the TOS era, Robert Conrad, Ross Martin, David Heddison, Ed Bishop, William Marshall and Christopher George come to mind.
Some really excellent new classic picks thee, Gov, thank you! Bishop, Hedison and George all should have occurred to me but hadn't.
Christopher George would have been a fine choice, a damned good looking man. In fact it wouldn't be that hard to have seen him cast as James Kirk.
Lloyd Bridges was mentioned already, but since he was the original Commander Cain from the original BSG, I think he would have made a good TOS captain. Kinda surprised he was never on TOS as a guest star, actually. I think he was offered the role of Kirk.
John Noble would have been awesome as a Captain or Science officer !

Garbo would have made a perfect Seven of Nine. This would have been Tom Paris and Seven to a tee.

I'm sure someone somewhere has probably played the 'cast Trek with classic 30s/40s Hollywood actors' game.
