I could go for that. She's certainly a better actress than Grace was(sorry to say) and could pass as her in the right costume and makeup.
I have no problems with Gary Mitchell being in there, too.

OR Connor as Trip's grandson OR great-grandson or something! We already have the tie-in of super-old Admiral Archer and his beagle...why not a Trip descendant as a Starfleet engineer serving under Scotty on the Enterprise? Sort of following in granddad's or great-granddad's shoes? Trip doesnt die in the ENT universe until at least 2161, which gives him time to have at least one kid.
