I agree that Star Trek: Enterprise was getting better during Season 4. Although I would still hesitate to call it good, I think it was on the right track and deserving of a 5th season.
I loved Angel but I'm kinda glad it ended when it did. Angel's story was already kinda over by the end of Season 2. Season 4 was exhilarating but doesn't make much sense upon subsequent viewings. Season 5 only survived by completely revamping the premise. Even then, I think the Wolfram & Hart storyline was only good for the year we got. A 6th season probably would have pushed things too far.
I believe that Star Trek: Deep Space 9 could have continued for years & years with a revolving cast of characters similar to the way that they're always changing the casts on ER and Law & Order. The relaunch novels seem to have demonstrated that.
NewsRadio would have gone on for many more years had Phil Hartman not been murdered. Not only was he one of the funniest actors on the show. But I think that the way in which he died drove the cast & writers into such a depression that the final season that they did without him was dripping with bitterness and is just kinda not fun to watch.
7 Days was 3 of the most fun years I ever had watching UPN. Oh, that I only had more. (Hell, I'd settle for CBS releasing the frikkin' DVDs already!!!
