Unnamed ship with the registry NCC1717 (TVH)
First off, love what I'm seeing so far.

What? Another Connie Refit in TVH? Am I a 43 year old old Trekkie with over 30 years of experience and not know this?
You can see it on screen when Kirk and Co are in the travel pod going to the Enterprise-A - just the nacelle and part of the pylon. In fact background dialogue and graphics confirm at least two other refit Connies were in Spacedock.It has long been postulated that the Enterprise-A in TVH was the quickly-renamed USS Yorktown that suffered downtime from the Whale Probe and moved around using a "makeshift solar sail". Yorktown's registry has been NCC-1717 since Gregory Jein gave it that number back in 1973, which sort-of stuck in lieu of Franz Joseph's NCC-1704 in the STTM (1975).
NCC-1717, in fact, has an older provenance for that vessel, but both numbers are considered apocryphal, as it was never definitively assigned in TVH or any other production, to my recollection.

I was in error regarding TVH. TWO unnamed Connies are seen on screen, but no registry numbers. According to background dialogue, one is possibly the Intrepid (not the original, which was destroyed), and the other is a true unknown. Yes, we have Gene's idea that the Yorktown was renamed and registered as the Enterprise-A. I've always been in favour of that, as it would explain much about that ship.
In terms of the registry numbers on Connies - I prefer to go by what was seen on screen, and not revised lists that were created after the fact. Remastered TOS also uses the original reg numbers as well, not the revised list, and Gene's golden rule is that "what is seen on screen is canon." But we're all adults here, and entitled to our own opinions, so IDIC.
Background info from the movie tie-in novels (TWOK to TVH) states that the studio was referring to the Enterprise as a Constellation Class Heavy Cruiser. It was later that she was referred to officially as a Constitution Class. Of course, TNG introduced the Constellation Class ("The Battle") behind-the-scenes info states the class ship was NCC-1974. But is that canon? The USS Constellation is mentioned in an episode of DS9 ("The Abandoned"), but not its registry number.
All this aside, background and behind-the-scenes stuff is fun to delve into, but the golden rule "what is seen on screen is canon" is one I personally stick to and tends to negate a lot of the background behind-the-scenes stuff.
My point regarding the number of Connies seen on screen is that we only really see two in any detail (Enterprise, Enterprise-A). There are detail differences between those two ships, thanks in part to the way ILM treated the shooting model and repainted it. But it was still the same shooting model. Differences would exist between various ships of the class, but we have such a small sample to judge by, that it's hard to say that's a fact, but I'm going to run with it as it's logical (at least to me).
