Now that would be the fanwank to end all fanwanks... the cavalry saving the day in the big battle at the end of the season consisting of all the ships at the Fleet Museum, with all of the heroes flying a different one, like Riker flying the NX-01 (he seemed to be familiar with it in, uhm, that weird after-series special that followed the two-parter ENT series finale), Seven flying Voyager, Worf flying the Defiant, Picard flying the original Stargazer, Deanna flying the Enterprise-D saucer, Jack getting the Enterprise-A he admired so much and so on..."Seven, you board and pilot the NX-01. Besides, with your Borg knowledge you might know how to fly a ship that old better than any of us."

Its supposed to be a refit of the NX-01. It makes sense that they would have put the ship into the museum in its final form.
I'm not sure whether the final episode of Enterprise is canon or not... but if we go by the assumption that it is canon, then the ship may have been first mothballed briefly, and once Archer helped with the founding of the Federation, he may have had used his influence in taking the ship out of mothballs and having it fully upgraded so it can continue onward for some time (probably for the next 40 odd years or more) before it was fully retired.
