Pretty sure that's just the lighting/black trim playing tricks. The Enterprise doesn't have the undercut in any of the shots.It almost looks like that Constitution Class ship has a slight undercut on the bottom of the primary hull.

That's just the lighting/shading. It's completely uniform all away the round the saucer, the Enterprise has the same black trim.And it definitely has the undercut.
The next shot I think is set on that ship, and there's some alien onboard that the Universal Translator can't handle.Maybe Pike is sent to either save or scuttle it?

Perhaps They are using a version closer to the original Enterprise as another ship of the class?

there is that starship poster from the Picard S2 premiere that shows that TOS Connie’s do exist in canon, just not the Enterprise for..reasons.
