The other thing to remember is that Dark Forces 2, Jedi Knight came out before Episode I, so much of the 'mythology' of the Jedi was still limited to the OT at the time. Katarn's Force sensitivity on a meta level was due to gaming purposes. In the milieu it was never explained other than he was simply Force sensitive, and this was all before anyone ever heard of Midichlorians.
From the mythology perspective, it lends credence to Katarn's success and ability to survive as a lone agent in so many hairy situations as well as against the Dark Troopers from the first game. Like Chirrut in Rogue One, his Force sensitivity probably granted him speed and reflexes well above 'normal' adversaries, even though he wasn't Jedi-trained at the time. Unlike Chirrut, he knew nothing of the Force (relatively speaking) until the events of DF2.
