Still hope for that Yippee-ki-yay after all. :D

How soon after the release of the episode will the Season 3 soundtrack drop on Apple Music & co.?

According to The Ready Room, this episode is called That Hope Is You (Part II).
And that particular ready room segment seems to have been filmed a month and a half ago, given that in the interview Jonathan Frank said he was going back to Canada to direct season four around Thanksgiving - which was over a month ago in the U.S.; so it seems between then and now, they decided to change the episode name.

Since the title of this episode is “That Hope is you, part 2”, I go on a limb and predict that Federation survives and we see Sahil again.

I'm actually disappointed that Sahil wasn't seen since the first episode.
This season went into different directions, but I think they made the number of episodes too short (13).
I think 15 episodes would have worked better to expand on things properly. Also, I noticed that the writers seemingly decided to progress a given story arc (or mini arcs) every other episode.

I'm pretty sure all the RRs are filmed way in advance of the episodes drop date. Wil gets the episodes before us common folk.

Why (and how) would the holo program change Grey unless someone other than Adira can see him?

suggests Grey or the Holoprogram are not what they seem.

I still don’t really get why the holoprogram changed anyone. Would 2 humans turning up really confuse Su’Kal more than a Bajoran and a Trill? I guess another Kelpian might have affected him but why turn him into a human if you’ve just covered up two humans?

I think it's not about the species of the "input", as much as rendering them as baseline templates within the program.

The preview shows a fight between Burnham and Osyraa. Have they actually met (viewscreen or otherwise) before this episode? I don't think they have unless I'm missing something.
No. Burnham wasn't on the bridge when Saru foiled Osyraa's plans earlier in the season.

But I think O knows who Burham is and what her role is on the Discovery. This fits with the speculation that there's a mole on the ship or at the HQ. Also fitting with this guess is that O knew who Tilly was -- even though it's also likely that Zareh told her about Tilly, Saru and Georgiou and his impressions of them.

So far live action CBS Trek has had one shite season finale (Disco S1), one great one (Disco S2) and one weird mix of shite and solid gold (Picard S1). Hopes are high for a good ending!

The Lower Decks season finale beat the pants off all of those.
