Not explicitly, at least so far. In the first episode they also mention something called a 'chain code' in relation to, or addition to, the tracking fob. The last four digits of a chain code are apparently the target's age, as that's all The Client could give The Mandalorian for The Job. I suppose that suggests some sort of biometric tracking. Probably based on publicly available or easily purchasable data. I would hazard to speculate that if you had a full chain code, you would be able to identify species, age, sex and/or gender of the target. Probably elements of physical appearance. Like a shorthand for dna profile. The fob is fed the code, and homes in on whomever the data belongs to.
Curiously, the tracking fobs unerringly target the Child, but the Client claims not to have the full chain code. I suspect this is almost certainly a lie, to prevent any of the bounty hunters from using publicly available databases to investigate the target prior to locating it. But that's a wild guess from the peanut gallery, at the moment.
I don't think he was a Dathomirian Zabrak though. Didn't get a good look but I'm pretty sure he didn't have Nightbrother tattooed markings, just the natural ones like Sugi, Eeth Koth & Agen Kolar. That said the armor did kind of look like Savage Opress's gear, so maybe he was Dathomirian but just from some other tribe? That or he's an Iridonian passing himself off as Dathomirian to seem more intimidating. Not unlike Jango and his armour...Oh yeah, pretty cool that one of those bounty hunters seemed to be a Zabrak (Darth Maul's race).

One, is stuff that is considered agreed upon or sensible by everyone doesn't mean jack if it isn't actually written in stone. I'm a bit more 'meh' on the third episode than most. It was alright, but I'm looking forward to them expanding a bit more and including more characters.
