All I'd take from that casual reference is what we already knew, that the Enterprise won't be a regular fixture of the show.
He's on record as saying that he doesn't want to redo TNG -- something he did thirty years ago.
But we've already seen the hologram in SF Headquarters, so the Enterprise (D) does appear in some fashion. Also, if it's meant to be a surprise to see the E or F, why would he spill the beans on a talk show? He's not under oath.
It says 1701-D behind the main shuttlebayI can't recall seeing any markings, which I could've missed. So it could be any Galaxy class ship.
It's 2019. People don't be disappointed. People will hate it with a feverish passion, puking with rage like The Last Jedi but 100x worse. But you know what? Some hardcore fans will be disappointed. People have ideas in their heads on how they feel Picard should act and behave and think and talk and all. This won't be their image of both the character and the timeframe. And I think the creators are aware of that.
I imagine this won't be Gene Roddenberry/Rick Berman Picard. It's okay, since this takes place twenty years after that version of the character.

I'm disappointed that the thing is being made at all. Pretending it's still the 80s is only marginally less embarrassing than pretending it's still the 60s.
