What kind of Trek cartoon do you want?

I'd rather not have a cartoon at all. I can't imagine a western cartoon which would treat the stories as serious as the best of Anime does. So if it is possible to do a serious story with a really alien crew, then treat it like an Anime.

Then you should watch Voltron Legendary Defender on Netflix. It shows how a quality animation show is done in the West. It all depends on the team behind the show.

Perhaps you have more faith in CBS in getting the right team, over a cheaper production, to fill air-time.

The guys who did Avatar The Last Airbender do it or even have Madhouse do the animation for it or Peter Chung of Aeon Flux fame

I don't really like the idea of a Trek animated series and especially the attitude that it should happen or have already happened-that suggests believing that it's easy to make a good cartoon and have it be popular, neither is so.

Animation doesn't have to be for kids but it does still have some of that association (and it maybe does need a lot of kid watchers to be successful) and regardless I think visual effects could be as interesting and maybe more impressive than animation, animation doesn't offer any unique value yet could be a little too different and lesser from what we've had with live action.

Can’t believe no one mentioned it already, maybe I missed it, but why not finish out 3 more seasons of ENT as an animated show, in the footsteps of TAS. Set it aboard the NX refit

Something in the vein of what Disney has done with Star Wars Rebels - an entertaining action adventure cartoon mostly aimed at children, but with enough emotional investment it can take its characters pretty seriously - and while the show has room for appearances from well known characters from the franchise, the core of the story is about its own, new characters.
I get where you're coming from, and I know they were popular, but I really didn't like those shows.

I'd want something a bit more mature, but to be honest, I'd prefer they didn't go the animated route at all.

Animation largely being for kids is a thing of the past.

If you watch any Japanese animation you'd know that an association with children isn't automatic.
