What would the Enterprise look like in the MU cause I doubt that they'd have the current Galaxy class configuration as a ship in the Empire, it doesn't exactly look that menancing compared to what the Connies and the NX class loooked back in there days. Would it still look roughly the same but a bit smaller or would it be an entirley different class of ship. Also would it still be the Enterprise "D" or just Enterprise?

I think it would have been fun if they retold "Best of Both Worlds" from the mirror universe perspective. Picard has demoted Riker down to pilot afer he tried to kill him and brings in Shelby to replace him. Admiral Wesley Crusher(only got his job because Beverely is the emperess)shows up in the Melbourne to inform them that the Borg have destroyed the colony we saw in our universe. The Enterprise leads the fleet to Wolf 359 to engage the Borg only everyone dies including the Enterprise except for Picard who is turned into Luctious. Final shot is a Borg cube in orbit of earth with Luctious informing earth it is about to be assimilated. We see this from emperess Crusher watching it from the presidenal palace.
How I would use the other characters
Data is pretty much like the real Data.
Worf Ship's doctor and a lousy one to boot.
Geordi=Genetically engineered sight. Huge Khan like ego.
Troi=Married to Riker. Demoted to ships prostitute when her husbands attempt to take control of the ship failed.
Guinan=Captain Picards wife. Pretty much the only decent person on the ship next to Data and Picard to a lesser degree.

To be fair, I think it hurt the MU on DS9 to have all the characters basically written the same. The mirror Halkans in TOS didn't seem to be too different, and the MUS had a mirror version of David Marcus. He didn't seem overly different from his counterpart either, and was part of a resistance movement against the Empire. Marlena Moreau was also in the resistance, having been inspired by her encounter with our Kirk.

Contrary to popular belief, life in the MU is not completely corrupt.
Look at Captain Maximilian Forrest. He was a loyal servant of the Empire, true. But he was much like his RU counterpart (Admiral Forrest) in that he was a basically decent person who would sacrifice himself for others. Look at the last thing we see him do: stay behind on his ship, knowing he would soon die, while buying time for the rest of the crew to get out of danger.
And in DS9, MU Quark and Brunt were genuinely nice people.
