Don't forget that Icheb was with them as well. Perhaps Seven and Icheb brought portable regeneration units with them in the escape pods.
^then they still would have needed a credible backstory as to why they needed equipment to 'sleep', whereas others didn't.
Well there is this line from the episode "The Gift"
JANEWAY: You'll have to spend a few hours each day regenerating in a Borg alcove until your human metabolism can function on it's own. We'll leave one operational.
Which implies that she wouldn't always have to use a regeneration alcove.

Who says she didn't regenerate? They could have given her a charging station in her apartment. They could pass off to her that the need for it was due to whatever "injury" she suffered that necessitated all her cybernetic augmentation.
