I decided to go with TOS, though I am confused by Netflix's run of the series. The order of episodes does not match the episode numbers in memory alpha. So, I am just going by what Netflix has.

From my own personal experience, I saw the TOS movies (Star Trek: The Motion Picture - Star Trek VI) perhaps a dozen times each before I ever saw an episode of TOS. Having a love and appreciation for the characters already helped me overlook the 60's-ness of TOS once I finally dug into it (in the late 90's on The Sci-Fi Channel). The only movie where knowledge of any TOS episodes comes in handy is The Wrath of Khan, and trust me, it's not necessary. Again, I saw TWOK many, many times before I ever saw Space Seed, I was fine.

The JJ Abrams films might a logical next step too. Star Trek Beyond really does feel like a big budget, modern version of a TOS episode.

Don't forget about the TNG movies, and Discovery.

They're in airdate order on Netflix. Production order is the better way to go with TOS, especially first season.
