Which races would you have liked to see more of in Star Trek?

I love the Klingons, but even I can admit enough is enough.

The Romulans, as a society, were finally given some meat in PICARD season 1. (I am not a big fan of that season, but I definitely think they did great in that aspect.) We could still use some more episodes about them.
 
Not a joke, but the Garidians from "A Final Unity." Sure they're just Romulans but...
The Gorn but just a guy in a suit like "Arena" and that commercial where old Shatner and a Gorn play video games.
The Cat guy from Star Trek IV but also as as guy in a cat suit.
I don't know if Discovery has already done 32nd century Klingons but they could do some societal shift where Klingons have brought back the other castes and the warrior caste is just one among like artists, scientists and what have you. I think you could still have them have the aggression and be blunt and obtuse but using it all ways of life, not just how to fight someone.

But they could at least namedrop the Klingons, after three years in the 32nd.

Maybe namedrop someone studying a post-industrial civilization, sending manned missions to a nearby M class planet....in the Veridian system.

Oh, I agree they could be at least name dropped. The Klingons were a huge empire.
 
I liked the Star Trek: Federation/Year 3000 idea that the Klingons have evolved into a monastic society. They spout wisdom and do martial arts but are otherwise peaceful members of the Federation.

I’d love to see the Bolians explored more. They’re friendly and gregarious, no drama.

Race as sporting event, the Antarian Trans could have a centuries long tradition now!

For what it’s worth, a Garidian appears as bridge officer in the PIC novel The Dark Veil. The Garidian warbird Unity is playable in STO.
 
I would love have to seen aliens that appeared in the books or games like the Chodak(Fish like aliens) from Final Unity or the Brassicans(Plant like aliens with three dights. They love tests.) from Judgement Rites.

OMG they were one of the best aliens in a ST game. They really were cool and gave off strong Hitchhiker's vibes. I wish we would have seen them in a live action show and another vote for the Viddiians (what is correct spelling of them) and also another vote here for the race that created Armus and cast him out.
