You forget that Odo was very much against using weapons.
He's probably the most nonviolent Security Chief the franchise ever had, which makes sense because with his abilities, though very limited compared to other Changelings, he didn't really need weapons.
But the point is still valid, he doesn't need to just punch enemies when he can entangle or bludgeon them. Especially true since a lot of the Klingons had disruptors, which will kill Odo just like they will any other person.
Odo is still limited by the episode's FX budget.
