Where Do I Start with the Novels??

I think it was at some point, however judging by the name of the first Quark E-Book, the number of Seekers and RotF novels as well as the general system of adding a * to the title of novels that will be released in 2015 the chart wasn't updated for quite some time.
This one is. You can see that in the changelog which shows that there were two changes this month.

TLE: One Constant Star features both Hikaru Sulu and the E-B.

Though keep in mind Sulu was never captain of the Ent-B that we've heard, that was the Excelsior. Harriman (from Generations) was captain of the Ent-B.

You know, it just hit me that the only Enterprise to be shown as having more than one captain (in a prolonged tenure) was the original. Kind of odd now that I think about it. Even in the Litverse it's always Harriman on the B and Garrett on the C.

Demora Sulu was also captain of the E-B starting from the end of Serpents Among the Ruins.

^ Yeah, both Serpents and One Constant Star feature Demora Sulu as captain (her promotion taking place at the end of the former novel). And we also know from other sources that the Enterprise-B had still other commanders besides Harriman and Sulu (William George in between Harriman-stints, and Thomas Johnson, Jr. as her final captain circa the Cardassian annexation of Bajor).

Oh, I completely forgot that until you two mentioned it, but now that you spell it out I do remember Harriman's promotion to Admiral and Sulu's taking over. Thanks for the correction, both!

Your welcome. Serpents is one of my favorite Trek books, so it stuck in my head pretty well.

I thought Harriman just left the Enterprise to be with the woman he married. I don't remember his promotion. Did that happen in Serpents?

I can't remember for sure, but I think that might have been why he decided to take the promotion.

...hahaha, you know, I'm just going to bow out here, because obviously my memory of stories involving the Ent-B is way worse than I thought. :p

What about novels focusing on certain characters, like Spock?
The Crucible trilogy focuses each book on Kirk, Spock or McCoy. The center point of the story is the alternate timeline of The City on the Edge of Forever, and from there it explores their lives with some great insights. Highly recommended. The trilogy also is self contained in it's own continuity separate from the main novel continuity.
Yesterday's Son is an old favorite that focuses on Spock as he discovered he fathered a son in the past of All Our Yesterdays and seeks to return to the past to bring his son back with him.

If you're interested in Spock, then there is the Vulcan's______ series. I haven't read them, but I think they're fairly well regarded. The first two books, Vulcan's Forge and Vulcan's Heart, take place between the death of Kirk in the Generations prologue and TNG. These were followed up by, Blood Sacrifice, a Domion War short story in the Tales of the Domion War anthology, and a post DW novel trilogy, Vulcan's Soul.
Spock also plays a big role in Troublesome Minds, a TOS TV series era novel, which I read and highly recommend.
I haven't read it yet, but I believe he also plays a major role in the pre-TOS novel Inception, which focuses on his relationship with Leila Kalomi and Kirk's relationship with Carole Marcus.
If you're interested in the Mirror Universe Spock, then The Sorrows of Empire is a must read. It follows his rise to power in the Empire and it's fall, and is one of my absolute favorite Trek books. There are two versions, a novella which is featured with two other MU novellas in the book Glass Empires, and a full length novel.
In the post Nemesis era, he plays a good sized role in Typhon Pact: Rough Beasts of Empire.
