Janice Rand is Demora Sulu's biological mother. Its not just because Rand disappeared midway through the first season of TOS. Its that she's friendly with Sulu earlier in the season, and that they end up serving together on the Excelsior. And something tells me me this was was known by the rest of the Enterprise crew, except Kirk, due to Kirk's unresolved feelings for Rand.
Kirk has a whirlwind romance with a 19 year old Yvette Picard between TUC and GEN. He only helped Picard when he meets him in the Nexus because he recognized Yvette's facial features. And might have even considered Picard to be his son, considering some of his final thoughts before entering the Nexus was about missing out on a second chance at family, particularly with Janice Rand. Kirk otherwise has no other reason to help Picard since he would not have any idea who he is.
As for Yvette, she never recovered from the heartbreak over the widely believed death of Kirk. That's what her mental illness, and obsession with the stars, was really about - her love of James T. Kirk.
Picard has a messy romantic history with Marie Picard, that resulted in Rene being his secret son. It explains that gap between the end of his command of the Stargazer and the beginning of the command of the Ent-D. And his apprehension of being around children. I think the Elise fantasy in the Nexus is partially fuelled by a desire for Marie, as well as a desire for Beverly. I find it plausible that romance continued on-and-off through the years between the loss of the Ent-D and launch of the Ent-E, and continued up to just before the beginning of PIC, when Marie Picard has vacated Chateau Picard by then.
The dune buggy stuff in NEM isn't out of character for Picard. It's actually tied to his experience in "Tapestry". It's possibly something he once loved to do in his cadet days that he rediscovered decades later.
One of the admirals that rejected Picard's new proposal for the Romulan relocation after the synth revolt was Marta Batanides. That probably why the rejection stung so much for him.

It would be unusual for there to be prejudice against the Xindi 400 years after the fact since they attacked Earth, for one they attacked Earth not the rest of the planets that became the UFP and humans don't have a 400 year life span, so there is no one around who remembers. The USA and the GB were enemies 250 years ago, no one is holding a 250 year old grudge over here.
Head canon: Scotty never changed history by giving Dr. Nichols the formula for transparent aluminum back in 1986. He knew that the inventor of the substance was working in San Francisco in 1986 and submitted the patent in the coming years, so he sought out Plexicorp for help with the plexiglass sheets to build the whale enclosure. He always figured he'd "give" Nichols the formula as insurance that he'd help them.

I had some small ideas for what I would headcanon as an alternative season 3 for Picarf but then it became a lot of small ideas so decided it would be more at home in the fanfic thread.
My headcanon has always been that all of the shows and movies are in-universe holonovels, and all discrepancies in canon, visual styles, characterization, etc. are the result of the individual authorship of each record.
Further, TOS-ENT are historical holonovels, depicting (with varying degrees of historical accuracy and dramatization) events which actually took place. All post-ENT Trek is in-universe fan fiction riffing on the successful historical holonovels. Some of the characters and events in those entries are based on real events, but overall they depict an alternate history and future somewhat like "For All Mankind" in our universe.
