Over on the Starship Modeler website they have a reference page written by Rick Sternbach listing the FS color code numbers for the paints used on the studio model. According to the article, the overall hull color is FS 35526 Deckhouse Blue. That should give you a good place to start.
The VFX folks typically dialed down the saturation of the Voyager model shots, so your best bet from a rattle can would be Light Ghost Gray.

I have photographed it with the Playmates and also the Starships Collection shots.
I used Tamiya TS-81 spray paint for Voyager & NX01 Refit, and it works well.
I used TS-67 for my BSG model (far too dark).
I Used TS-32 for K7 and my small Enterprise C model.
I used AS-25 (which I DO NOT recommend for my large Ent-C) as it comes off as blue and not gray!
I used Matt white for my Reliant & Grissom.
Just ignore the colours on any instructions. For instance, the Reliant says duck blue for the primary hill, around the aft torpedo pylons, but this looks awful now, I should have went for dark gray. Best bet is to look at the TV/film or various screen caps on the web and do what looks like that, not what the specific modellers on the series used.

The hardest colour I ever had to find was Galor class yellow/brown!
