Hypothetically, if we went back to that universe 16 years later where would the characters be?
Sisko - Based on him saying he'd be back "maybe tomorrow, maybe a year from now" I think he came back pretty soon after the finale and moved to Bajor with Kasidy and their child. He's probably still a religious icon to the Bajoran people.
Kira - I think she'd have commanded DS9 for a few years but I don't think Kira would be interested in a life in Starfleet. The episode Rapture indicated the Bajoran Militia would be integrated into Starfleet so I think she probably went down a more political route in her career. No doubt she'd continue to visit DS9 in her role as First Minister
Bashir - DS9 was his first assignment. I never saw him staying there for the rest of his career. He either got a job at Starfleet Medical and reunited with O'Brien or transferred to a ship as chief medical officer.
Ezri Dax - No way did she and Bashir stay together. I think (and I'm told in the novels) they split up. Ezri was very new to the joined Trill process. After a few years I think she'd be influenced by the experiences of previous hosts and transfer to command (this also happens in the novels, I believe). I'm unsure if she'd stay on DS9. Perhaps she'd try to move up the ranks on a starship.
O'Brien - Still happily married to Keiko and teaching at Starfleet Academy. I really don't see it any other way.
Quark - Like O'Brien, I can't see Quark anywhere else but at his bar on the station.
Jake - This is a strange one because I think Jake as a character would benefit from not having his father around for a few years. I could see him leaving DS9 and travelling the galaxy as a reporter to gain experience for his writing. Perhaps Jake leaves before Ben returns and is not within reach of communication.
Odo - Very difficult to say. Who can know if Odo felt at home in the Great Link. Maybe he did his job and changed their perception of solids and then went back to Kira. Or maybe he felt so at home in the Great Link he never left it.
Worf - It looked like he was serving on the Enterprise again in Nemesis so it clearly didn't work out with him being the Federation ambassador to Qo'Nos. I think Worf would have become Picard's first officer after the departure of Riker and the death of Data. Assuming the ship would still be in service I'm sure Worf is still there.

Sisko - He returned and took command over the station. He did build that house on Bajor where he and Kasidy could go on vacation from time to time.
Kira - Stayed on the station as Commander until Sisko returned. Then she went back to be the commanding officer for the Bajoran forces at DS9 and also as Bajoran Ambassador to the Federation.
Ezri Dax - Stayed on the station as Starfleet officer.
Bashir - Remained as the Medical Officer at the station.
O'Brien - Got tired of the boring job as teacher at Starfleet Academy and missed the exciting job at deep Space Nine and his friendship with Bashir and the others so much that he wrote to Sisko and asked him to bring him back as Chief Engineer to Deep Space Nine. Of course Sisko agreed to that. It caused a conflict in his relationship with Keiko who decided to stay on Earth, almosd divorcing Miles. However, after a year, Keiko realized that she couldn't live without Miles so she moved back to Deep Space Nine and got a job as botanist on Bajor.
Nog - Served some years on a Federation ship, then he was assigned as Security Officer on Deep Space Nine.
Rom - Became Grand Nagus in the Ferengi Alliance but after a few years he was ousted in a coup led by Brunt whose goal was to restore the old Ferengi way of living. He returned to Deep Space Nine with Leeta and became O'Briens assistant.
Leeta - Followed Rom back to Deep Space Nine and got a job as chef at Neelix's new restaurant at the station, The Leola Root which speciality is exotic food from the Delta Quadrant.
Worf - Realized that Starfleet after all was the best place and got an assignment on the Enterprise.
Jake - Continued to work as a journalist and often took vacations on Bajor to visit his good, old Dad and Kasidy.
Odo - Got tired and bored by the daily life among the Founders and their internal bickering and also tired of the new Weyoun clone who constantly tried to manipulate The Founders for the interests of the Vorta. One day Odo thought enough was enough and simply returned to Deep Space Nine and his beloved Kira. He got his job back as Chief Of Security and on his free time, he sometimes plays piano or ocarina and sings with Vic Fontaine.

Ro Laren - Worked as Chief Of Security until Odo returned. Stayed as a member of the Security staff on Kira's request.
Garak - Returned to Cardassia in order to help his people to build up their society again. But he got tired of the constant conflicts among the ruling circles of Cardassia and started to healize that his best years in life had actually been his time at Deep Space Nine. After becoming heavily depressed, he visited his old friend and colleague Julian Bashir in order to find a treatment for his depression. With the help of Sisko who pulled a few strings, Garak was assigned the post as Ambassador for Cardassia to The Federation and Bajor with his office at Deep Space Nine. There he continues to handle Cardassian interests and affairs in the Federation and on Bajor. During his free time, he read books, discusses politics with Bashir, Kira and Sisko and on some occasions sings Iron Maiden songs at Vic Fontaines lounge which is a part of Quarks entertainment house.
Quark - Stayed on Deep Space Nine with the goal of transforming his bar to the No: 1 entertaining place in Federation territory. As such, the bar constantly had a lot of live music events going, like visits of famous musical artists with connection to the Starfleet, such as trombone virtuoso Will Riker, the famous country music duo Sonny & Data, the song group Kes and The Kestrels, guitar virtuoso The Doctor and other well-know entertainers which are seen on the posters below from Quark's-Where The Action Is!
