Shrimp and pork jambalaya pasta. It's essentially the same thing as a traditional jambalaya with noodles taking the place of rice. I'm using egg noodles but rotini or penne also works well.
ingredients
noodles
shrimp
shredded pork
black-eyed peas (or black beans)
canned tomatoes
celery
onions
bell peppers
parsley
garlic
Real easy to make. Mince the celery, onions and bell pepper, mix it all up, toss that in your frying pan with the shrimp and pork with a little bit of oil, stir-fry style. You don't want to cook the meat all the way though, just enough to sear the outside.
Next get a little water in a big pot and throw all the other crap in there, except for the noodles. Get everything boiling real good for about 5 minutes, then toss the noodles in. When the noodles are starting to get tender, cover the pot and reduce to simmer for about 30 minutes. That will thicken the sauce up, and when you no longer see water in the pot it is done.
