1/2 medium onion chopped
2 big garlic cloves, chopped
a few glugs of sunflower oil
-- fry above in medium saucepan until it starts to brown
1 can of chopped tomatoes
100g split red lentils
about 1 pint of water?
1 vegetable stock cube
1 heaped teaspoon of tomato paste
-- bring to boil
a handful of celery leaves, chopped.
a good bit of basil and parsley
a small amount of oregano and sage
quite a bit of black pepper
a little salt
-- simmer until cooked (15-20 minutes)
-- blitz with hand blender to preferred consistency
