had basically the whole inlaw family over at the last minute and so decided to "go easy" and make "lazy lasagna", with salad and garlic bread. But, me being me, I essentially did everything I would have for regular lasagna except I used ziti instead of layering with lasagna noodles. A good time was had by all. ;)

    More potato waffle-based consumables.
If I ever survive this Christmas period, physically as well as spiritually, it will be all down to potato waffles. :)

Thanks to a sale at our local grocery store, I was able to fix a great dinner for less than $15 (and it fed 3 people).

3/4" thick pork chops (2 for each person)
    Cheddar mashed potatoes
    Large tossed salad
    Peas

    Mmm.....

If I had my druthers, I would deep fry everything I consume, even beverages. So I could be full of vigor and stuff.

A can of low sodium chicken soup. I wasn't feeling quite right last night and it was all i could think of putting in my stomach that would stay there.

I was feeling tired and sore after a day at the doctor and dentist. Hubby rooted around in the fridge and made wheat pasta with pesto, and baked up some breaded tilapia. Not bad.

Just realized that I hadn't posted since Christmas Eve. Christmas Dinner was fantastic. We had this great moist Turkey, duck for my brother, brussel sprouts, beats, roast potatoes and turnips with gravy.

On Monday night which was my birthday I had Fish Pie along with a green salad, trifle for desert. Last night I had Christmas left overs.

Tonight I made homemade potatoevedges with carrots and onions and herbs in the oven, served it with strips of steak and caramellised onions. :)
We had not really planned on new years dinner, so I went with something that is always nice for us :)
