What Did You Have For Dinner Last Night?

Something called a "Hunter's Melt" which was on the specials board at the pub and grill last night. Thinly slice ribeye covered in swiss and cheddar cheese, grilled onions and sauteed mushrooms served on sourdough bread with fries. It was surprisingly good.

It sounds awesome from the description. Why the surprise at the goodness?

More of the same, boring dinners. I'm trying to get my blood sugar back under good control, and despite consuming pretty much nothing but salad and veggies (non starchy, I know my carbs), I'm not having much luck. :(
Today's salad: mixed greens, celery, green onion, sprouts, chickpeas, homemade tahini dressing.

I'm killing time, waiting for my roast leg of pork to finish cooking. It already smells utterly delicious but isn't quite done yet, so I'm desperately trying to distract myself from it while waiting... :drool:

I've been less than impressed by some of the specials at this place in the past. They always have a good description, but the results aren't always up to par. This time they were.
 
Had BBQ Steak, brown rice, and salad for dinner last night. With Fig Corn Meal muffins for dessert with vanilla yougurt. Yum.
 
These ribs got dry rubbed with some spices and then baked for about 40 minutes before they hit the grill last night..

Damn, I loathe pork but those ribs do look good! I just love BBQ.

For me, I'm still being extremely careful with my diet. Today I created a tuna salad: Premium white tuna packed in water and drained mixed with finely chopped celery, carrot, onion, and cabbage, a bit of vinegar, sesame oil, pepper, and a few other spices. It was actually really, really good! Very low carb, low fat.

I also found a sugar free dark chocolate bar from Godiva at the impulse counter in the grocery store! I'm allowing myself half (no sugar doesn't mean no effect on blood sugar).
 
I skipped dinner as I always do on Tuesdays because of class, but my friend made me a snack to eat during class. Some wheat thins, a low cal granola bar, and carrots. Sometimes I love my friends.

Aw...that's sweet. Little actions like this always touch me.
 
^^^ Yeah, it totally made my day. She's been so supportive of me going back to school and little things like that go so far.
 
Whatever I'm having for dinner each night, it shall now be with a sizeable helping of salad. :bolian:
 
So, The Hubby's been feeling poorly since returning from 4 solid days of drinking at Oktoberfest ... and requested my extra special tuna casserole to make him feel better.

Call me white trash, I don't care, it was gooooood. :p
 
We had yummy homemade Butternut Squash with fresh bread. Chocolate Pudding for desert since my brother had his wisdom tooth taken out earlier.
 
A fatty cheese sandwich. I didn't feel like being good tonight. I made teriyaki chicken stirfry for my husband so that's likely what I'll have tomorrow.
