I think Mark Harmon would be a good dad for Wesley and Jeannotte. Plus, he's already in the CBS ecosystem.
IIRC, since leaving NCIS he's basically retired from acting and is currently writing a book about the real NCIS agency.

The guy who is dating Kirk's mom in the Kelvinverse and is pissed that young KIrk stole his Classic car. In this timeline him and Kirk's mom are just having a affair since dad Kirk is a asshole.
They should upset everyone and cast Chris Pine.

So, P+ put up a short video trailer promoting the streamer as the "Home of Star Trek." It's a great promo, but...
...every time they'd cut to Nimoy or Quinto as Spock or Shatner as Kirk it took me right out of the thing.

As to Sam, I agree with those who say there's no reason to believe he did leave Starfleet, but if he did, I think it'd be because he wants to get out of his dad and brother's shadow by doing something different with his life. Alternatively, maybe he gets out because he meets Aurelan and figures that starship life would interfere with a marriage and kids - again, perhaps wanting to be different from his father in how he raises his kid.
But again, why were there no other Starfleet personnel present? If Deneva had been a Starfleet outpost, you'd think that at least some of the mobs chasing Kirk and Spock would have been in uniform, even if Sam wasn't.
In one ep, Pike asks him about his family, and Sam replies "All fine, sir." So Sam must have already met and married Aurelan and they have had their kids.
