Greek yogurt scones (Americans would call them biscuits).
They are made by simply combining 1 1/4 cup of self-raising flour with 1 cup of Greek yogurt, kneading the mixture for a few minutes, cutting into the desire shapes/sizes and baking in the oven for 10 to 15 minutes.
I made the scones last night. For lunch I cut a couple of them in half, spread some of yesterday's leftover vegetable mash (potato, pumpkin, carrot and cauliflower mashed together) on top with a little bit of ham and microwaved for 45 seconds. Delicious and healthy.
Plus an apple and blackcurrant fruit drink.
