Tuvok. How old is he supposed to be anyway?

No, his actual age is not given in Fury, though Janeway comments he isn't too far from triple digits. Which contradicts Flashback, where he is stated to be 29 in 2293, meaning his age should already be triple digits.

But he has mentioned he studied violence for over 100 years, and the fact he was 29 in his memories in Flashback (at the time of Praxis exploding) allow us to calculate his actual age.

I don't think that's canonical though.
Nothing of the kind was ever mentioned in fact.
Tuvok's birth date would likely have been part of his SF biographical data (which would be needed to create an accurate psych tests and other things needed to 'challenge' him - though living in a fairly harsh environment of Vulcan, most of the challenges in SF academy weren't exactly of the same calibre).
You don't recognise sarcasm?

Tuvok was born in 2264, on the Vulcanis Lunar Colony, according to Memory Alpha.

He would have been 106 or 107 when Voyager was lost, and 113 or 114 upon its return.

That answers the relevant question.

Maybe there's a 'prefer not to say' option for age when applying to Starfleet, much as there is one for gender these days.

I don't think that would be optional considering that SF wouldn't want to take in people who are too young for example.
But if I'm not mistaken, back in 'Flashback. episode of VOY, Tuvok did mention to Janeway he was 29 years old at the time Praxis exploded.
Janeway would have easily been able to calculate his age from that point - so I'd say this is just something the writers either messed up, or Janeway was intentionally playing coy with Tuvok (since the whole scene in 'Fury' was a bit of fun for her).

Also, given the premise that Janeway and Tuvok are fairly good friends, I doubt he would keep his age secret from her.

I'd certainly agree that Tim Russ is the best actor apart from Leonard Nimoy at portraying a Vulcan.

I make a distinction, because Nimoy and Russ are essentially playing two different things. I think Nimoy's portrayal of a man torn between being Vulcan and Human is peerless and always will be, but what Russ does is subtly different. He's pure Vulcan, allowing him to pull off the previously thought to be impossible... A character who is even more stoic than Spock...

Yeah. Tuvok isn't my favourite Voyager character, but that has nothing to do with the quality of Tim Russ's acting. The guy absolutely nailed playing a pure Vulcan and he even made sure that the writers got on his level. I can't imagine anyone would've done a better job.

Early seasons state that he's over 100, but he celebrated his "99th" birthday in Season 6's "Fury." I'm just assuming Tuvok is middle-aged in Vulcan years, and vain about his age.
