Are there any novels that focus on either of these two groups?
The Tholians are a major part of the Vanguard series, so you might want to check those books out. The Gorn haven't been featured as much, I don't think.
However, both races are part of the upcoming Typhon Pact novels, so those will probably have something to offer you.
A lot of Tholian culture was actually established, iirc, in The Lost Era: The Sundered, which is also a pretty awesome book.
I'd read that book and then Vanguard, to learn more about the Tholians. Plus Vanguard is absurdly fantastic all around![]()
They've both had some decent stuff in the comics, too: The Gorn Crisis for the Gorn (duh) and the Chakuun story arc in Early Voyages (now collected as Star Trek Omnibus, Volume 2) for the Tholians.

Here's all we ever saw canonically of a Tholian prior to "In a Mirror, Darkly":

Just a faceted "head" with a pair of eyes in it. The shape of the rest of the body was unknown, and there were many different speculations, but usually it was assumed that what we saw in that image was the Tholian's actual head. However, Recovery asserted that it was merely a helmet worn over the real head.
