From TOS, I would pick:

Well, to explain the core of Star Trek...

All Good Things is a must, if simply for what Q tells Picard at the end.

Star Trek "isnt just about maping stars and studying nebula, it's about charting the unknown possibilities of existence."
 
TOS:
Journey to Babel- political & family relationships
Balance of Terror- fear, prejudice, DRAMA

MOVIES:
Spock's Death Scene
Spock's Funeral Scene- both show best of Trek, relationships & emotional cost of what they do

TNG:
The Inner Light- still my favorite modern episode, exploring another culture is what it's all about
Darmok- first contact at its best
Family- explores emotional cost & relationships

VOY:
the one with aliens planning the invasion... Boothby look-a-like (don't know episode title)

ENT:
opening theme song

DS9: not going there, playing nice today :alienblush:

I chose one main and a runner up from each series, which was extremely hard since there are so many good ones.
TOS
Main was "City on the Edge of Forever" Runner-up "Where No Man has Gone Before"

TAS
Main pick "Yesteryear" and the runner-up "More Trouble, More Tribbles"

Movies
Main pick is "The Wraith of Khan" Runner-up "First Contact"

TNG
Main pick "Family" Runner-up "The Drumhead"

DS9
Main pick "Far beyond the Stars" Runner up "The Visitor"

Voy
Main pick "One" runner up "Blink of an Eye"

Main pick "Demons" and the runner up "Terra Prime"

Excellent choice.
 
When faced with this question, I am always inclined to say "Star Trek: First Contact". Captain Picard essentially defines what the Star Trek philosophy is to the character of Lilly. In addition, the end of the movie allows one to witness literally the birth of Star Trek. It doesn't hurt that the movie is perhaps the most accessible and interesting to a non-fan.

In terms of exlusively episodes, "Darmok", "The Devil in the Dark", "Demons"/"Terra Prime" and especially "The Measure of a Man" strike me as strong candidates.
