Her uniform at the beginning of the series is fine. But once she received her Starfleet commission, she should have had to conform like the rest of the crew.Why stop there? Maybe also have T'Pol be require to get cosmetic surgery so she could look just like everyone else?
Seriously, why does T'Pol have to wear a starfleet uniform? She's not in starfleet at the beginning of the series and she should never be Starfleet for the duration of the series run, she's Vulcan not Human.

Truely thought it was strange that T'Pol was first officer of the NX-01. A consultant sure, a observer okay, a foreign military attache yeah, but she should not have been a part of the same chain of command as Starfleet. And therefor not first officer. Ever.
The crew would show her a appropriate level of respect, but she couldn't issue a legal order.
But the thing is the job of first officer comes with actual responsibilities and duties, it's a job that takes years to gain experience to perform. T'Pol was a officer in the Vulcan Security Agency, at one point a fieid operative, when we first see her see she is attached to the Vulcan embassy on Earth.
