Being a thankless job sort of implies you expect thanks but routinely get none. It's the mismatch being doing what you feel is a worthwhile job and being abused for it that gives it that uniquely despair-inducing thankless nature. I doubt anyone going into the Traffic Warden business expects to ever be thanked for giving someone a ticket, or even thinks much of the job itself, beyond it just being a way of making some money. I dunno, maybe there are some traffic wardens out there who fully believe they're helping keep the streets safe for ambulances and kids crossing the road by ticketing cars parked on double yellows... but I really doubt it.
So my pick for being a thankless job would be any sort of telephone customer support role. Even if you're just following a scripted set of responses, your end-goal is still to end the call as quickly as possible with a good outcome, and the sheer number of aggressive, rude and stupid calls they get surely gives it one of the most severe mismatches between expected thanks and actual thanks.
