In some of the fleet shots the Ross class are missing their nacelles. oops

Nah, they’re just variants, like how the Sagan class has four nacelles but the Echelon class only has two but are essentially the same ship.

Bashir hated the carpet, Picard missed the carpet. Carpet can be surprisingly polarizing.

They did restore the D to her pre-Generations bridge layout (minus those side stations).

Is it the Steamrunner class, though, or is it a new ship with the same name? For all we know, the original Appalacia was destroyed in FC.

Quoting myself: the Appalachia is the same Steamrunner class from FC, not the newer STO version, as we see the registry on the display. So Steamrunner class ships are still in use in 2401.

Also, I think I see a Defiant class in the fleet.

There were no pyramids shown on-screen. There was a pyramid design in the Starfleet Command III PC game (based on Task Force/Amarillo Designs SFB), and an obelisk that was a conceptual design for STFC.
