Probably because the point of Star Wars, from a film making perspective, was to push the boundaries of film making. Use older concepts and make them look new. Not take an existing technology and make it look like an old movie.
Lucas pushed in every film, at least with the technology he could get his hands on. While these new films might not push as much as Lucas might have pushed, it keeps his setting more or less in place. No need to make the films look like they were filmed in 1977. They need to look like this film was filmed in the Star Wars Universe around the time of the Battle of Yavin regardless of the quality of the camera or film used.

I can picture it now. Obi-Wan returns to his little hut in the Jundland Wastes and is surprised to find Bail Organa waiting for him, and Bail says he's there to talk to Obi-Wan about the Skywalker Initiative.I wonder if this film, along with the events in Rebels season three, will be used to justify calling Obi-wan Kenobi out of retirement? Rebels looks to be taking a dark turn so far, and we assume Darth Vader will make a brutal appearance in Rogue One. The lack of Jedi will be keenly felt in this movie. Darth Vader slashing through rebel troops would do that. With the turn Rebels is making, it would seem reasonable that the Rebel Alliance has no one who can stand toe to toe with Darth Vader. They don't even have hundred people who can stand against him 100 to 1. Because he's Darth Vader.
Who can you call on to defeat a Sith Lord? A Jedi Master? Who has defeated a Sith Lord in recent memory? Obi-wan Kenobi and Anakin Skywalker are the only two that come to mind. (Obi-wan's have a habit of not dying when they are "killed"). Anakin is "dead". So that leaves Sith Carver Kenobi.

I'm still pissed at Princess Leia for giving up Tatooine to Tarkin as the fake location of the Rebel base, knowing he was planning to blow it up.
