I haven't seen this idea proposed before, so I congratulate you on being original.
The biggest problem I see with this is the part about it being a reality show, when Star Trek itself is a fictitious universe. Maybe if they had to like actually live on an area of a building to be remodeled to look like ship hallways, with fake windows of images of stars passing by...That might be interesting. Give them Uniforms.
They could train in different areas that a good Starfleet Officer needs to know in. Like they could have an episode where they worked on diplomacy, and each contestant had to negiotiate a deal with a Tellarite, Andorian, etc., without getting them mad or violating Starfleet's orders. ("Don't let them have Alginua III, no matter what.") They could do planet search and resuce missions, target practice, and what not. One of the episodes could have their 'ship' being attacked by an alein vessal in the middle. They could have a Borg challenge, too.
It would be fun to have someone like Jonathon Frakes (Riker) be the host. There's some potential here but I think you'd have to have one of those crazy risk taking executives to get it on, and I don't know what channel. Sci-Fi maybe?
