Can you use Cortana on an Apple device?!
My thinking is that it is one behind-the-scenes program that accesses different parts of the ships library depending on the function it is being asked to do. We see on Voyager that one holographic framework (program/emitters) can handle multiple uses (Medical/Command) and I think that is what is going on here.
Of course the next episode could completely blow that interpretation out of the water. But nothing I've seen yet suggests it is more than one EH program running the multiple holograms we see.

Could be one or the other, I agree. But, then, I use one program to browse the internet, a different one to write on, another to do 3d modeling and another to edit audio. They are all discrete programs running on a single operating system which I am running different installation on multiple computers connected by a network. No reason why Rios ship can't operate the same way. The whole idea that you run a ship on one computer is so 1960s, not to mention dangerous and a security nightmare.
It's SOFTWARE, it'll do just about what ever one wants to program it to do.
Including multiple tasks at once.
Hell the TOS Enterprise even fell in love with Kirk once while still doing all it's assigned tasks to monitor and run the ship.
If its software there can be multiple installations. If its hardware, it can be multiple discrete units. All of which is better security-wise because one going down doesn't take all the rest down. Mind you, we haven't seen a Star Trek ship yet that doesn't have that particular 1960s style vulnerability, have we? How smart would it be for Starfleet and other races in general to start building ships with backup computers, eh?
Which would be a waste of money and hard drive space in the here and now.
There would need to be holographic projectors all over the La Sirena for one EH to work, seems silly to install a second set.
Projectors are hardware, though, not software. Multiple different pieces of software not to mention multiple computers could use the same projectors. iI, for instance, use multiple computers because if one goes down, I don't have to wait until it is fixed to continue working. And while the Federation is in a post scarcity age, we've been given ample examples of it not being in a post computer security breath/shut down age.
How many episode plot complications would have been instantly solved if starships were installed with back up computers?
I hope we get an Enterprise-E scene like the station wagon crushing scene from National Lampoon's Vacation...
