This seems to be the main ship, in the shape of the logo...?
 
Kinda looks like it's only the saucer section and the top part of the neck.
Yeah it definitely looks like the ship might have a secondary hull from which the saucer separates for planetary landings. The Athena has been stated to be 'huge' so it is possible that this is just one part of the ship. It would make sense that a ship carrying cadets would have a saucer separation feature in the even the ship gets into a battle.
 
I would assume it to be a programmable training ship. Near infinite configurations to train cadets on multiple possible starships.
 
It exists as a building most of the time.
Very heavy construction to protect the youth. That’s my guess.

I can’t help but wonder if Giamatti is half Fajo, half Arturis…someone who had much—and lost it all.

He sees kids with not-a-care-in-the-world…and he wants to be their Salieri.

That massive pylon hull will keep the kids safe, we hope.

I marked for you parts that I think I recognized:
Orange are weapons platforms.
Blue is main deflector area.
Green is hangar bay.
Yellow is bridge and command center.
Pink are warp nacelle coils (which are romulan/klingon parts that extend on side of external rim of detached saucer.)
Purple are impulse engine with impulse crystal.

For me this ship looks old, like very old at least 700-800 years old (notice shape of TOS/Picard S3 rim on inner saucer), that was refited and introduced to service for Academy.
It also makes sense since pre-burn ships that were decomissioned and their warp cores were disabled are now re-introduced within structure of Starfleet and updated in Archer Spacedock.
 
It's not using the "White Hull Armor" plating that the rest of the 32nd Century vessels are using.

It looks closer to USS Discovery coloring where it looks like raw un-painted steel.

It's definitely a interesting design change compared to the rest of the fleet.
 
Perhaps it is an older starship that Earth kept after it left the Federation.

It is also based across from San Francisco. As you can see Ft. Point is still there at the other end of the bridge.
