I think they did the custom chair just for this episode, probably to accommodate the puppeteers, and Pike in-universe.

We have an image of the bridge from Season 5 and it doesn't look like that.

No not really. TOS, TNG, DS9, VOY and ENT all had their silly episodes. I didnt stick around long with much of the new series so maybe thats where it got uber serious.
