I think they did the custom chair just for this episode, probably to accommodate the puppeteers, and Pike in-universe.
We have an image of the bridge from Season 5 and it doesn't look like that.
They are gonna cover this in Trek Tech...explaining how this incident affected the chair.... aren't they?
