Quintessential Characters

As a Vulcan, I see Sarek as the quintessential example - not Spock. As noted by others earlier, Spock is by definition, not a typical Vulcan - cannot be!
On the other hand, marrying human women is not really typical. ;) Ironically, he was more more bothered by the half-humanity of his son than the full of humanity of his two wives. But yes, he's the one who defined Vulcans as major diplomats (despite they're closed on themselves).

For the Klingons, Kang and Kor were good examples; as Koloth was the opposite.

Koloth had in TOS something that became more romulanish in TNG, but he weas alson one of those treacherous Klingons. The drunk Korax opened the way for Klingons as biker gangs.
 
Vulcan- Tuvok
Klingon- Worf
Ferengi- Rom (a model of what an ideal, progressive Ferengi should be like)
Andorian- Shran (there aren't really many other choices)
Romulan- Either the Romulan commander played by Mark Lenard, or Senator Cretak in DS9
Founder- Odo!
Borg- Hugh, or Seven
