I appreciated the modularity of the new Enterprise-A and the escape pods now located along the rim of the B-deck (reminds me of the Enterprise-E era ships, plus escape pods kinda make sense).

Right, I'm a big fan of that effect. My first reaction when seeing it in theaters was that it strongly reminded me of various warp field bubble graphics in TNG. In my head canon, the warp bubble is the bullet that creates the shape in the proverbial "water."
Basically, the theory behind "warp drive" is that the ship creates a bubble that compresses spacetime ahead of it and expands spacetime behind it. Nothing physical can travel the speed of light or faster. The fabric of spacetime can, however, since it's massless. The ship would remain "stationary" while space moves around it.Is it the warp field or the deflector pushing space debris around the ship? I wasn't sure which.

It's also to protect against debris at sub-warp speeds. Even a grain of sand has the impact of a bullet if it's traveling at hundreds of kilometers a second. A starship exploring a nebula or entering planetary orbit would definitely want to be able to guard against space debris.Well,
Firstly: the Warp Engines create the Warp Field. The Warp Field is an artificial spacetime "bubble" (created by utilising the negative energy that exists within the Universe's own spacetime) which enclaves the spaceship. As a result the spaceship no longer exists within the spacetime of the Universe but within the spacetime of the aforementioned "bubble".
Secondly: the Warp Engines propel this artificial spacetime "bubble" within the spacetime of the Universe (not the spaceship itshelf) by 1)constantly contracting the spacetime of the Universe that exists in front of the "bubble" (as a result the foward part of the "bubble" constantly expands) and 2)at the same time constantly streching the spacetime of the Universe that exists behind the "bubble" (as a result the rear part of the "bubble" constantly collapses). Inside the " bubble" the spaceship is motionless.
So, the spaceship does not move --> c=0 --> theory of relativity not violated. What moves is the artificial spacetime "bubble". But, spacetime does not possess mass --> m=0 --> theory of relativity again not violated.
According to Star Trek tech lore the purpose of the deflector dish is to protect the ship from space debris which would be destructive at warp speeds. However, this bothers me (i feel it is a mistake ) because when traveling at warp the spaceship no longer exists within the spacetime of the Universe. So, it would not be possible for the spaceship to interact with objects that exist within the spacetime of the Universe and as a result the spaceship would not require protection from those objects.

Exactly, plus most alien ships don't have exposed deflector emitters yet they travel at warp and sublight perfectly fine also. The way I see it it's no different then radar on modern aircraft which have radomes covering the "dish", not every variant has to be exposed to function. For the Miranda Class ships it could be located on the top of the saucer on the emitter looking pieces parallel to the Bridge, or on top of the dual launcher, for the Phoenix and NX-flyers I figure they have them under the radome/nose cones, and the Franklin looks to have a small emitter on the underside of the saucer section.They must, because there isn't a dish on the Franklin, the Reliant, the Phoenix(Cochrane's, not the Nebula-Class).
