Is it odd nothing burns me out when it comes to video media?
I’ve watched every MCU movie and series since they started, and I still look forward to the next one. Same with Star Wars
I do get burned out with reading and playing video games, but not when it comes to tv/movies
Edit: well that’s not entirely true. I did stop watching NCIS for about 4 years because I got bored. But I came back to it about 5 years ago
So far the only MCU projects I’ve disliked are Secret Invasion and Iron Man 2

Agreed completely (aside from enjoying Iron Man 2).
Certain people here complain about a mountain of content to keep up with, but I only see that as a daunting task if you're starting from scratch now. Even then, you can still break up things in different ways, whether by each phase or by each character or by each team. None of it is a requirement but of course there will be ongoing story and character arcs playing out, because that's how serialization works.
Regardless, there was hardly ever a time in the MCU's history that offered a fire hose of content coming at you all at once to make you feel overwhelmed.
I also no longer go to the theatre (haven't since December 2019), so there is a large gap for me between the movies since I wait for them to hit Disney+. Sometimes I rent them if I can't wait any longer.
SW isn't exactly a firehose of content at this moment. Now that Andor's done, the only thing they still have coming out this year (that I know of) is Visions season 3, and that's not even canon!
( I'm not including books/comics/games/toys, just watchable stuff )
Maybe I'll have time to catch up. Is The Mandalorian period of shows done know or are there more coming?
Ahsoka season 2 and the movie The Mandalorian and Grogu are still to come. And we don't know yet whether Skeleton Crew will get a second season, though it was pretty popular, so I'm hopeful.

As long they keep making MCU, Star Trek, and Star Wars content, I will keep seeing it.

Look; when people who do this kind of internet journalism 'put forward a rumor that makes sense', I say yes it can happen. But you have to be a blind fanboy not to see Marvel's bad trend.
This "Bad Trend" is exactly what happened in the Post-Avengers 1 period. Folks were saying Phase 2 was overall a slump and aside from Guardians and Winter Soldier the whole thing was subpar. Then Phase 3 happens and poof, naturally folks forget all the stuff they said.
